Let's start with the basics. For the foundation of our mashed potatoes, you'll need high - starch potatoes like Russets. Their texture breaks down beautifully, resulting in a light and fluffy mash. Begin by peeling and cubing the potatoes into evenly sized chunks. This ensures that they cook at the same rate. Place the cubed potatoes in a large pot and cover them with cold water. Adding cold water rather than boiling water allows the potatoes to cook more evenly from the inside out.

Bring the water to a boil over high heat, then reduce the heat to medium - low and let the potatoes simmer for about 15 - 20 minutes, or until they are fork - tender.
